He brags on the facebook page how the Church is scared of him and will not take any action against him.

I hope he gets help before doing something with long-term consequences. The Church has been pretty charitable to him so far by just ignoring his breaches of their civil and intellectual property rights. But if/when he commits a crime, it is completely out of the Church's hands. One of the more sane ex-Mormons he runs around with need to smack him across the face with a reality check. 1

If you access a computer system without authorization, you are violating (at minimum) the Computer Fraud and Abuse Act, and are looking at a federal charge. Assuming, of course, that the feds are interested in going after you. But if you make a big enough stink, that's the sort of thing that tends to happen. 2

Yes, he will have access to more info than that, but not much more info that he can really do anything useful with. The only thing I can think of is that they could maybe send out mailers with pre-filled name removal requests that simply need to be signed and submitted. That might get a few bites, but nothing major like he's talking about.

I see one of two options: 1) If he happens to get access to enough stakes, he could cross reference name removal requests with stake directories to see if the church is processing those name removals. 2) He's just harvesting email addresses to be able to spam info to them. But he would need to be creative with that... perhaps he creates emails that look just like the current emails we receive from the church. Maybe he sends emails that highlight the controversial gospel topics essays (I know quite a few people who went into faith crises as a result of reading the gospel topics essays).

What exactly is NNN doing again? I guess my brain functionality is on low right now. I'm not clear on what exactly is his motive, is it to get people to go to the super fast lawyer and get their names off of church records or something. Those that are unaware of the lawyer doing this service?

Most of the people I know, seem to read those emails blasts from the Church. I think he could probably get a decent number of clicks.
