Why argue the bible is infallible?

Do you believe that the Catholic Bible is the word of God?

God has said everything He wishes to say and has provided His Word. There is nothing more that GOD needs to say aside from fulfillment of the prophecies contained in His Word. There is no circumstance that would necessitate anything additional being added to the Bible -- I believe it is complete with the prophetic finale of REVELATION of Christ.

Well, you have the writers of Matthew, Mark, Luke, and John and questionably Josephus.

We have Joseph Smith, Oliver Cowdery, Sidney Rigdon, Brigham Young, Lorenzo Snow, and more so we have you beat there.

If you want to change the goal to people who reported seeing him we still have more. The Bible gives you about 500 and some change who saw the resurrected lord. The Book of Mormon has thousands of witnesses so we win there too. Of course we believe in the Bible visitations too we we beat you by a landslide. 

Checkmate. When would you like the missionaries to come get to get the process of baptism started?

You do not have the wisdom to make the determination that what has been revealed is enough and you certainly do not get to tell God that He must be silent from here on out.

I believe many Bibles contain additional data not necessary to the story of Christ and His message of Salvation.

I do know that all the early Christian disciples had was originally the Old Testament. And the Apostles and those directly associated with them explained the association of the Old Testament with regard to the Lord Jesus Christ in the New Testament.  Jesus had informed them that they would be inspired to remember directly from what Jesus Himself explained by the Holy Spirit. And finally there is the Revelation of Jesus the Messiah and the climax to the salvation story.

Jesus continues to reveal Himself from the pages of both the Old and New Testaments to this very day. He is never silent to individuals as they mature in their belief during their lives.

If the Bible doesn't say it's full I don't see where you get off saying it is.  (And that verse at the end of Revelation only refers to Revelation, not the canon).

Also, the Bible says God can do nothing save he reveals it to the prophets.  Which prophet detailed his current will and actions concerning us today?  Or is he on vacation and doing nothing?

The Apocrypha is separated from the other books --- between the Old and New Testaments. That inclusion of the Apocrypha would not corrupt the other books. 

The Apocrypha is not inspired, but certainly has historic value regarding the Jews.

Revelation clearly says not to add prophecy additionally to that book. Any latter revelation would be adding to the Revelation. The pastors, minister, and theologians today apply the Bible to everyday considerations with inspired understanding. The Bible is complete with regard to Christ and His Church. The Book of Revelation also reveals that 2 witnesses will appear during the Tribulation.

Revelation says not to add to that prophecy.  Nobody added anything to Revelation.  It has nothing to do with additional books being added to canon. When those words were written there was no Bible and no canon to apply them to.

If God still speaks to man then scripture is still being created.  If the Holy Spirit still inspires men then scripture is still being created.  If the hand of God is still observed and recorded in the lives of men then scripture is still being created.

No servant of God and not even God himself has ever said otherwise.

No.  There is no salvation between the lids of the Bible or any other scripture without a legal adminstrator.  (To paraphrase Joseph).
