It seems like God is constantly "working" though, so how do we rest in communion with Him if we aren't taking part in what He's doing?

I guess I don't know for sure. But using words like work, labor, and responsibility turn off the lazy hippie in me for sure  

It's so beyond our comprehension that who knows how it will be. But I would be very surprised if it is "work" like we think of it now.

I agree.  One of our most famous scriptures (which I'm sure you've heard of before) says "For behold, this is my work and my glory—to bring to pass the immortality and eternal life of man."  Helping in that endeavor is how I picture the "work" of the next life.  Not stuff like chores.

Why will the exalted want/need servants?

Whether the exalted want servants or not they will have them.
 

mark e Peterson said blacks (negroes) will be servants in heaven. Soooo I guess it is the blacks ( no matter how righteous they are) and then everyone else who isn’t exalted who will be servants to the exalted.

I agree. He is probably just a servant himself unless his second anointing has bought him a free pass for his racism.
