If our priests were married with children, or what comes next, caring for aged parents, it seems like I would never call them in the middle of the night for the last Sacraments for myself or loved ones.
The Catholic Church teaches that each of us have a "vocation". Each of us need to discern the state of life is to which we are called. No matter our calling, it will involve self-sacrifice, and even suffering for those to whom we are obliged to minister. Most are called to the Sacrament of Matrimony. A select few are called to the Sacrament of Holy Orders. Some, a very few are called to both.
