According to Shazam, they're playing a section of a Gregorian Chant called "Ad Matutinum: Invitatorium: Deum Verum" at the 1:10 mark. 3

Here's an Easter favorite, the German Order sang the first few verses before they would charge people, I think. Posted it a few times, found one with English lyrics. 1
