What is a good estimate of the population of greater Israel during the time of Christ? What about Jerusalem?

 

Also, what modern countries would the territory of Moab and Edom be associated with? I assume that Ammon is modern-day Jordan (Aman, Jordan).

Not very big even by ancient standards. I would guess a few hundred thousand at most.

Moab (east of the dead sea) is in modern Jordan. Edom (south of dead sea) is split between modern Israel and modern Jordan. (source: map found here)

 

Per http://en.wikipedia.org/wiki/Demographic_history_of_Jerusalem#1st_century_Jerusalem Jerusalem had around 80,000 at the time of Christ's birth.

That's pretty much what I thought, although it was a lot smaller than we tend to think.
